ROBIN MIDGETT is a native New Orleanian with a passion for the Heritage Louisiana cuisine she grew up with. As a professional Chef and Instructor for more than two decades, she has developed teaching techniques that make it easy for even those with no experience in the kitchen to successfully prepare and execute delicious, authentic dishes.

After Hurricane Ida, Chef Robin relocated to South Florida and is ready to bring authentic New Orleans cooking to you!.
This class will cover the basics that make Louisiana dishes unique, including preparing a dark, Cajun roux, a blond Creole roux and the use of 'the Holy Trinity'. Dishes can include Gumbo, Etouffee, Jambalaya, BBQ Shrimp or Corn Maque Choux. (Chef's Choice based on seasonality).

This class will feature three dishes that explore how fresh Louisiana seafood pairs with classic French sauces. Dishes can include Shrimp Remoulade, with Antoines original recipe, Seared Scallops with a classic Beurre Blanc, Pan Seared Red Fish with a traditional Meuniere Sauce, (also known as the four stages of butter.) or Louisiana Blue Crab Cakes with Hollandaise Sauce.
